2 cups mixed seafood (shrimp, crab, and scallops), peeled and deveined

1 cup diced onions

1/2 cup diced celery

1/2 cup diced bell peppers (any color)

2 cloves garlic, minced

3 tablespoons Cajun seasoning

1/4 cup all-purpose flour

2 cups seafood or chicken stock

1 cup heavy cream

1 tablespoon Worcestershire sauce

1 tablespoon olive oil

Salt and pepper to taste

1 pre-made pie crust (or homemade if preferred)

1 egg (for egg wash)

Fresh parsley, chopped (for garnish)

Preheat your oven to 190°C (375°F).

    In a large skillet, heat olive oil over medium heat. Add onions, celery, bell peppers, and garlic. Sauté until vegetables are soft, about 5 minutes.

      Stir in the Cajun seasoning and cook for an additional minute to release the flavors.

        Sprinkle the flour over the sautéed vegetables and mix well, cook for another 2 minutes.

          Slowly whisk in the seafood stock and heavy cream, bringing the mixture to a gentle simmer. Allow it to thicken for about 5 minutes.

            Add the mixed seafood and Worcestershire sauce, stirring until the seafood is fully coated with the sauce. Season with salt and pepper to taste. Remove from heat.

              Roll out your pie crust and fit it into a pie dish. Pour the seafood filling into the crust. Cover with another layer of pie crust or create a lattice pattern if desired. Trim the excess dough and crimp the edges to seal.

                Beat the egg and brush it over the crust for a golden finish. Cut a few slits in the top to allow steam to escape.

                  Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.

                    Allow the pot pie to cool for a few minutes before serving. Garnish with fresh parsley before enjoying.
