1 large ciabatta roll or baguette

100g sliced salami

100g sliced pepperoni

100g sliced provolone cheese

1 cup arugula or spinach

½ cup roasted red peppers, sliced

¼ cup olives, pitted and chopped

2 tablespoons olive oil

1 tablespoon red wine vinegar (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Start by slicing the ciabatta roll or baguette horizontally, creating a top and bottom half.

    In a mixing bowl, combine the chopped salami, pepperoni, provolone cheese, arugula, roasted red peppers, and chopped olives.

      Drizzle the olive oil over the mixture and, if using, add the red wine vinegar. Toss everything together until well combined. Season with salt and pepper to taste.

        Spoon the chopped filling evenly onto the bottom half of the ciabatta roll.

          Top with fresh basil leaves, then place the top half of the bread on.

            For a warm sandwich, grill the entire sandwich on a panini press or in a skillet for 3-4 minutes on each side until the bread is crispy and golden, and the cheese is slightly melted.

              Slice the sandwich into portions and serve immediately.
