4 slices of sourdough bread

2 tablespoons unsalted butter

2 large onions, thinly sliced

1 teaspoon sugar

1 teaspoon balsamic vinegar

1 teaspoon dried thyme

Salt and pepper to taste

1 cup shredded Gruyère cheese

1 cup shredded mozzarella cheese

¼ cup fresh parsley, chopped (for garnish)

In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions and sugar, stirring occasionally until the onions are caramelized and golden brown, about 15-20 minutes.

    Stir in the balsamic vinegar, dried thyme, salt, and pepper. Cook for another 2-3 minutes to combine the flavors. Remove the caramelized onions from the skillet and set aside.

      In the same skillet, melt the remaining tablespoon of butter. Place two slices of sourdough bread in the skillet.

        Sprinkle half of the Gruyère and mozzarella cheeses evenly on each slice of bread in the skillet. Layer the caramelized onions over the cheese, then top with the remaining cheeses.

          Place the other two slices of bread on top to create a sandwich. Cook for 3-4 minutes until the bottoms are golden brown and the cheese has started to melt.

            Carefully flip the sandwiches and cook the other side for an additional 3-4 minutes until golden brown and the cheese is completely melted.

              Once cooked, remove the grilled cheese sandwiches from the skillet and let them rest for a minute. Slice in half and garnish with fresh parsley before serving.
