1 cup crushed pineapple, drained

1/2 cup brown sugar

1/4 cup unsalted butter, melted

1 cup all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

Maraschino cherries for garnish

Prepare the Base: In a medium bowl, mix the crushed pineapple with the brown sugar and melted butter until well combined. Set this mixture aside to allow the sugar to dissolve slightly.

    Make the Batter: In another large bowl, whisk together the flour, granulated sugar, baking powder, and salt. In a separate bowl, combine the milk, egg, and vanilla extract, whisking until smooth. Gradually mix the wet ingredients into the dry ingredients until just combined. Be careful not to overmix; a few lumps are okay.

      Prepare the Instant Pot: Grease a 7-inch round cake pan that will fit inside the Instant Pot. Pour the pineapple mixture into the bottom of the cake pan, ensuring it’s evenly spread. Pour the batter gently over the pineapple mixture.

        Add Water and Set Up the Instant Pot: Pour 1 cup of water into the bottom of the Instant Pot. Place a trivet inside the pot and carefully set the cake pan on top of the trivet.

          Cook: Close the Instant Pot lid, set the valve to sealing, and cook on high pressure for 25 minutes. Once the time is up, allow it to naturally release for 10 minutes before performing a quick release to let out the remaining steam.

            Cool and Flip: Carefully remove the cake pan from the Instant Pot. Let it cool for about 10 minutes, then run a knife around the edges to loosen it. Invert the cake onto a serving platter so the pineapple side is on top.

              Garnish: Top each bite with a maraschino cherry for a classic garnish. If desired, cut into bite-sized squares for serving.
