Mediterranean Spinach Grilled Cheese

Zutaten
  

2 slices of whole grain bread

1 cup fresh spinach, chopped

1/4 cup feta cheese, crumbled

1/4 cup sun-dried tomatoes, chopped

1/4 cup Kalamata olives, pitted and sliced

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

1/2 cup mozzarella cheese, shredded

Anleitungen
 

In a skillet, heat 1 tablespoon of olive oil over medium heat.

    Add the chopped spinach and sauté until wilted, about 2-3 minutes.

      Stir in the sun-dried tomatoes, Kalamata olives, garlic powder, salt, and pepper. Cook for another minute and remove from heat.

        In a bowl, combine the sautéed spinach mixture with the feta and mozzarella cheese. Mix well.

          Take the slices of whole grain bread and spread a thin layer of olive oil on the outside of each slice.

            On the ungreased side, generously spread the spinach and cheese mixture.

              Top with the other slice of bread, oil side facing out.

                In the skillet, grill the sandwich over medium heat for about 3-4 minutes per side, or until golden brown and the cheese has melted.

                  Remove from skillet, let it cool for a minute, then slice in half and enjoy!
