1 cup almond flour

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1/4 cup orange juice (freshly squeezed)

Zest of 1 orange

1 teaspoon vanilla extract

1 cup white chocolate chips (dairy-free if preferred)

1 tablespoon coconut oil (to melt with the chocolate for dipping)

In a large mixing bowl, combine the almond flour, softened cream cheese, powdered sugar, orange juice, orange zest, vanilla extract, and a pinch of salt. Mix well using a spatula until the ingredients are completely combined into a smooth batter.

    Once the mixture is smooth, cover the bowl and refrigerate for about 30 minutes to help firm up the mixture, making it easier to shape into truffles.

      After chilling, take small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. Place the rolled truffles on a parchment-lined baking sheet.

        In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

          Dip each truffle into the melted white chocolate, ensuring they are fully coated. Use a fork to lift them out, allowing any excess chocolate to drip off before placing them back on the parchment-lined baking sheet.

            Once all truffles are coated, you can sprinkle additional orange zest on top for garnish, if desired. Let the chocolate set at room temperature or place them in the fridge for quicker results.
