Philly Cheesesteak Egg Rolls

1 lb (450 g) ribeye steak, thinly sliced

1 tablespoon olive oil

1 medium onion, finely chopped

1 green pepper, finely chopped

2 cloves garlic, minced

Salt and pepper to taste

1 cup provolone cheese, shredded

12 egg roll wrappers

1 egg, beaten (for sealing)

In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and green pepper, cooking until softened, about 5 minutes.

    Add the minced garlic and cook for an additional minute until fragrant.

      Push the vegetables to one side of the skillet and add the thinly sliced ribeye steak. Season with salt and pepper. Cook until the steak is browned, about 5-7 minutes, stirring occasionally to combine with the vegetables.

        Remove the skillet from heat and stir in the shredded provolone cheese until melted and well combined with the steak and vegetables. Let the mixture cool slightly.

          Lay out an egg roll wrapper on a clean surface, with one corner pointing towards you. Place about 2-3 tablespoons of the steak mixture in the center of the wrapper.

            Brush the edges of the wrapper with the beaten egg. Fold the bottom corner over the filling, followed by the sides, and then roll tightly to seal. Repeat with remaining wrappers and filling.

              In a deep pan, heat oil over medium-high heat (about 350°F or 175°C). Carefully add the egg rolls a few at a time, frying until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

                Serve warm with your favorite dipping sauce, such as a spicy mustard or a homemade cheese sauce.
