Zutaten
  

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 inch fresh ginger, grated

1 teaspoon ground turmeric

1/2 teaspoon black pepper

4 cups chicken broth (low sodium)

2 cups cooked chicken, shredded

1 cup carrots, sliced

1 cup celery, sliced

1 cup kale, chopped (or spinach)

2 tablespoons lemon juice

Salt to taste

Fresh parsley for garnish

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

      Sprinkle in the ground turmeric and black pepper, mixing well to coat the onions. Cook for 1-2 minutes, allowing the spices to become aromatic.

        Pour in the chicken broth and bring the mixture to a gentle boil.

          Add the sliced carrots and celery, reducing the heat to a simmer. Cook for about 10 minutes or until the vegetables are tender.

            Stir in the shredded chicken and chopped kale (or spinach), allowing it to heat through for another 5 minutes.

              Finish the soup by adding lemon juice and adjusting salt to taste.

                Take the pot off the heat and let it sit for a few minutes to deepen the flavors.

                  Serve hot, garnished with fresh parsley.
