2 cups sushi rice

2 ½ cups water

½ teaspoon salt

1 tablespoon rice vinegar

1 tablespoon sugar

1 pound sashimi-grade tuna, diced

2 tablespoons mayonnaise (preferably Japanese Kewpie)

1 tablespoon sriracha (adjust for spice preference)

2 green onions, finely chopped

1 avocado, sliced

1 tablespoon sesame oil

1 tablespoon soy sauce

Panko breadcrumbs, for coating

Rinse the sushi rice under cold water until the water runs clear, removing excess starch.

    In a medium pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

      While the rice is cooking, in a small bowl, mix the rice vinegar and sugar until dissolved. Once the rice is done, fluff it with a fork and fold in the vinegar mixture gently. Let it cool to room temperature.

        In another bowl, combine the diced tuna, mayonnaise, sriracha, and finely chopped green onions. Mix well and set aside.

          Once the rice is cool, take a small scoop (about 2 tablespoons) and form it into compact rectangles or squares. Repeat until all rice is shaped.

            Heat sesame oil in a large skillet over medium-high heat. Dip each rice piece into panko breadcrumbs to coat them evenly. Fry the rice pieces in batches until golden brown and crispy on each side, about 2-3 minutes per side. Drain on paper towels.

              To assemble, place a fried rice piece on a plate, top with a generous spoonful of the spicy tuna mixture, and a slice of avocado.

                Drizzle with soy sauce and sprinkle with black sesame seeds before serving.
