Zutaten
  

4 slices of whole-grain bread

1 cup fresh spinach, washed and dried

1/2 cup ricotta cheese

1/4 cup sun-dried tomatoes, chopped

1/2 cup shredded mozzarella cheese

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1 teaspoon garlic powder or fresh minced garlic

In a bowl, mix the ricotta cheese with chopped sun-dried tomatoes, fresh spinach, salt, pepper, and garlic (if using). Stir until well combined.

    Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.

      While the pan heats up, spread the ricotta mixture generously on two slices of bread. Sprinkle the shredded mozzarella cheese on top.

        Place the other two slices of bread on top to make sandwiches.

          Once the skillet is hot, place the sandwiches in the pan. Grill for 3-4 minutes on each side, adding the remaining olive oil around the edges, until the bread is golden brown and the cheese is melted.

            Remove from the skillet and let them rest for a minute before cutting in half.
